Butternut Squash Soup
~ Dash Olive Oil
~ 1 Onion
~ 2 Cloves Garlic
~ 1 Butternut Squash
~ 6 cups Water or soup stock (chicken or veggie)
~ Salt to taste
Sauté onions and garlic in olive oil until the onions are soft (about 5 minutes)
Add butternut squash (peeled, seeded and cut into chunks).
Cover the squash with water or stock. Bring the water to a simmer and let the squash cook for 15 minutes or so until soft.
Remove a cup or two of liquid and blend with an immersion blender or by transfer to a stationary blender and mix until smooth. Add liquid back in until you reach the desired consistency. Add salt to taste.
Serve and enjoy!
Optional additions: Coconut milk (replace a cup of water with a cup of coconut milk), Roasted Apples (add at same time as squash), Roasted Chestnuts (add with squash). |
