Yummy Homemade Granola

~ 7 cups old-fashioned rolled oats
~ 1 or 2 cups nuts (sliced almonds, pecans, walnuts or really any nuts are good)
~ 1 cups flaked coconut (unsweetened, organic if you can find it)
~ 1 teaspoon salt (or to taste)
~ 1/2 cup olive oil (other veg. oils will work ok too)
~ 1/2 cup honey
~ 1 cup golden raisins (5 1/2 oz)
~ Optional: 1 cup flax seeds, sesame or sunflower seeds
~ 1 cup Dried Cranberries (preferably fruit juice sweetened)

Preheat oven to 220 degrees F

Line a large shallow baking pan with parchment paper or foil (you will need to grease the foil).

Toss together oats, almonds, coconut, and salt in a large bowl. (add seeds here if desired)

Whisk together oil and honey, then stir into oat mixture until well coated.
Spread mixture in baking pan and bake, stirring occasionally, until golden brown, 60 to 90 minutes.

Stir in raisins (and cranberries if desired), then cool completely in pan on a rack.

Makes about 10 cups
